Chef Naj Reveals His Holiday Menu Picks

Can't decide which items from our event catering menu to choose for your upcoming holiday event? We asked Chef Naj what he would serve if he were hosting a breakfast, lunch or dinner to celebrate the holidays or winter break. Let's run down the picks from the foodie who knows our menu best!

Breakfast: Savory with a Side of Sweet

"Personally, I would go for some classic savory items and complement them with something sweet," he said.

Holiday Breakfast Menu Picks: Cheese & scallion scrambled eggs, hashbrowns and bacon with a side of the French toast bake.

 

Lunch: Comfort Food!

"For holiday-themed lunches, comfort foods work great because they provide a balm during the cold weather," Naj said.

Holiday Lunch Menu Picks:

  • House-made meatloaf buffet with:
    • Scratch-made sour cream & onion mashed potatoes
    • Garlic butter green beans with crispy fried onions
    • Garden salad with choice of dressing
    • Artisan rolls and butter
  • Lemon & thyme marinated chicken thighs with garlic-pan sauce. This menu item includes creamed kale with garlic breadcrumbs and scratch-made stuffing.

Side note: If you're looking for something a little lighter yet comforting, CKC Good Food team members have really enjoyed the grilled cheese sandwich and tomato soup buffet for lunch.

 

Dinner: A Meal to Impress

This one was easy for him! This memory instantly came to him: "I hosted Christmas dinner for the first time last year and people went crazy for the dinner I made, which was basically versions of items from our catering menu!"

Holiday Dinner Menu Pick: Braised short ribs with porcini dry rub and red-onion agrodolce. He would pair that with sides of:

  • Bacon-fried brussel sprouts
  • Scratch-made sour cream & onion mashed potatoes (These are really good! He picked them twice!)
  • Baked French bread

 

Grazing Events: Interesting and Pleasing

For those events that aren't centered around a meal but you still want to offer guests something light, he recommends a savory and sweet pairing again.
